Montana’s Finest Restaurants & Lodges - Their Recipes & Their Histories
Walter and Susan Nickerson opened the Pollo Grill on April 1 1998.  Since that time the restaurant has enjoyed much critical acclaim and wide popularity with locals and visitors alike…The atmosphere at the Pollo Grill is comfortable and casual and the attentive service ensures a wonderful experience.  The well-trained staff offers insight to all questions of preparation and is quick to offer wine-paring suggestions.

Some of their most requested recipes are in the Savor Montana Cookbook - Steamed Littleneck Clams with Chorizo, Fennel, Garlic, and White Wine, Osso Bucco with Gorgonzola and Rosemary Risoto, Mixed Field Greens with Ricotta Insalata and White Wine Vinaigrette, and last but not least Cannoli with Shaved Chocolate.

Plan ahead for Thanksgiving, and the Pollo Grill will welcome your part of six to eight people with a turkey baked just for them. The grill will package up what you don’t eat for you to take home or back to your hotel room refrigerator so you can enjoy those all-important day-after-Thanksgiving leftovers.

Don’t have six people? You can get a turkey dinner will the trimmings just the same. On Christmas you’ll find Roast Prime Rib of Beef, Yorkshire Pudding, and Christmas Goose, along with festive side-dishes. Return on New Year’s for fresh Maine Lobster, Beef Wellington and Buffalo Tenderloin au poivre…

Flathead Living Magazine
As reviewed: …Let me now describe to those of you who are unfamiliar with this wonderful restaurant what to expect each and every time you dine there. First, you will meet Susan, Walter’s wife, as she greets every guest and makes them feel like family or her personal guest. It is, as I mentioned earlier, a very unassuming building and location, from the outside…One thing is sure, their quality, quantity and courtesy are second to none.

…The menu is, as I see it, the most extensive offering in the valley. Nowhere do you get a daily selection of starters, salads, accompanying side dishes, daily specials, rotisserie and grill entrees, and specialties like this, and I haven’t even mentioned the desserts and wine list. Walter has compiled a selection of over one hundred hand-selected vintage wines from around the world. The staff’s knowledge and expertise in helping you select the perfect wine for dinner is something they all take great pride in…

…Summer brings the bountiful local fresh fruits (Flathead cherries and huckleberries), vegetables and spices (peppermint and wintergreen mints), and throughout the year the Montana-grown elk, rainbow trout, lamb and bison make both the visitors and locals rush back for more…
